Humans are creatures of habit. PBH research shows that the consumption of fruits and vegetables is declining nationwide, even among traditionally higher-frequency consumers. There is also a reduction in previously prevalent uses of fruits and vegetables in everyday life – AND, we also know from the latest research that people who learn new fruit and vegetable hacks are more likely to "do" them. Join Lunchbox Dad, Beau Coffron, Chef and Registered Dietitian Abbie Gellman and Yale Hospitality, Health & Wellness Manager, Sarah Kiel, RD, as they discuss – and bring to life – different approaches and styles to show hacks that build habits in retail, foodservice, at home and specifically for kids.

Sarah Kiel, RD, Health & Wellness Manager, Yale Hospitality
Sarah is an accomplished dietitian and wellness presenter with extensive experience creating, implementing and directing dietary initiatives and nutrition communications in the food industry. She has been awarded for her work for six consecutive years by the Utah Worksite Wellness Council for employee health and wellbeing programming. Sarah is also recognized for promoting wellness on live TV, social media and print media.
Sarah received a bachelor's degree in dietetics from Indiana University. When she's not helping people discover their own health and wellness, you can find her discovering her own by mountain biking, running, hiking or cooking.
Beau Coffron, President, The Lunchbox Dad
Beau Coffron is a dad who was inspired to create special lunches every Monday for his kids while they are in school. Many of these lunches are inspired by characters such as Despicable Me, Minions, Disney Princesses and Star Wars Characters. From this project, the Lunchbox Dad website and social media were born. The blog and his social media went viral and expanded to national appearances on national TV shows such as Good Morning America and The Steve Harvey Show. Beau has been prominently featured in People Magazine and trended on websites such as Buzzfeed, The Huffington Post, Bored Panda, Yahoo E! Online and Martha Stewart.
Abbie Gellman, Owner Chef Abbie Gellman
Chef Abbie Gellman is a spokesperson, recipe and product developer, educator, nationally recognized culinary nutrition expert, and Director of Teaching Kitchen and Culinary Medicine at St. Barnabas Hospital. She creates, produces, and hosts cooking and nutrition videos and works with a wide variety of food companies/brands, commodity boards, foodservice operators, health professionals, and private clients. She has three published cookbooks and appears in local and regional broadcast media and contributes to many publications as both an expert and an author. Abbie lives in NYC with her daughter, Olivia, and many shelves of cookbooks.
Amy Myrdal Miller, MS, RDN, FAND, Founder & President, Farmer's Daughter Consulting, Inc. and PBH Culinary & Foodservice Specialist
Amy Myrdal Miller is an award-winning dietitian, farmer's daughter, public speaker, author, and president of Farmer's Daughter® Consulting, Inc., an agriculture, food, and culinary communications firm based outside Sacramento, California. Prior to founding her company in 2014, Amy worked for Fleishman Hillard, Dole Food Company, California Walnut Commission, and The Culinary Institute of America.
Today, Amy works with a variety of clients across the food system, including seed companies, commodity boards, non-profit organizations, start-up food innovation companies, campus dining operations, and national brands. She also writes a monthly "Produce on the Menu" column for Produce Business magazine.
Amy serves as a National Dairy Council Ambassador and a National Cattlemen's Beef Association Beef Expert Bureau member. She is a founding member of the Bayer L.E.A.D. Network, a member of the Texas A&M AgriLife External Advisory Board, and she recently joined the Bayer Vegetable Seeds Horticultural Advisory Council.
Amy is a member of the Academy of Nutrition and Dietetics, a past chair of the Food & Culinary Professionals DPG, and a past president of the California Academy of Nutrition and Dietetics. She currently serves in the Academy House of Delegates.
Amy received her B.S. in dietetics from the University of California, Davis and her M.S. in nutrition communication from Tufts University Friedman School of Nutrition Science and Policy.
